Commercial-grade portafilter - Has Gaggia's tried-and-true boiler and heavy chrome plated brass commercial-grade portafilter
Fits under the cupboard - The design of the Evolution with the steam know on the side and the water tank on the side fits better under home cupboards than other design by Gaggia.
Articulating steam wand- The steam wand articulates for easy steaming in pitchers of different sizes

Cons

Poor build quality - The Evolution uses a lot of plastic in the case that does not hold up well after a few months of use. The buttons can fail after a few months of use.
Doesn't get hot enough - In our testing the Evolution does not get quite hot enough to pull a sweet shot of espresso.
Poor warranty support - Gaggia does not have regional warranty centers like other manufacturers do. Warranty repairs often involve costly shipping to New York and many customers have complained that turn-a-round times are very long, often taking several months.

How it Works
Commercial Quality Espresso: Gaggia espresso is true Italian espresso. Thick with crema, black as night, more flavor per ounce then any other home machine. All Gaggia brewing components are specifically manufactured to ensure top quality espresso. This includes the heavy duty portafilter handle that weighs in at one pound of chrome plated brass. It matches up to a true commercial brew group also forged of chrome plated brass. The benefit to using such heavy duty material is temperature stability and unmatched durability.

Care
For detailed care instructions, please refer to your machine's user manual. We recommend that you also incorporate the following into your cleaning routine:

Descale the machine every 2-3 months
Clean removable drip tray
Rinse portafilter and baskets after each use
Brush brew head gasket area weekly to remove any coffee build-up

...not knowing if anything less than a professional store model could do the job OR if it would be easy enough for me to do quickly without a lot of hassle. SHAME on me, as this little machine makes a GREAT shot, or double-shot, in a flash, and it's produced perfect espresso. Piece of cake! No, rather Cup of Espresso! Easy to follow DVD takes you thru the steps, watched it for 2 minutes, and in 2 more minutes had my 1st cup of espresso! Now, I did use the packets, so now it's on to the daily grind-pack-brew 'formal' procedure. Hey, is buying the packets sorta like using Cliff Notes for a book report? I think not.....but the latter provides more involvement and a keener interest in the process. Bottom line: This machine does exactly as advertised, and it's easy!
