Colombia has a great year for fruit forward coffees, and El Paraiso from Batdorf and Bronson is a great example. From the Tolima region, a favorite of Batdorf's green coffee buyer, this washed process coffee will impress you with it's clean and refined notes. It's juicy and sweet, but lacking the fermented notes of some other fruity coffees. The medium roast makes El Paraiso excellent for a variety of brew methods. We taste blackberry, watermelon, and cane sugar.

Recommended Brew Methods
A 2:1 water-to-coffee ratio for your espresso shot is recommended. Using a scale to dial in your shots makes the process faster and more accurate. Your espresso grind should be very fine and powdery. Shots should take 30-40 seconds to brew and be thick and syrupy. Don’t stress, adjustments are always needed to get your shots pulling just right!
We recommend a 16:1 water to coffee ratio for your dosing. Use a scale for best results! For pour over, use a medium-coarse grind size somewhere between drip and press levels. Start with a short pour to wet the grounds and “bloom” the coffee for 30 seconds, followed by two more pours, divided in half to reach the appropriate remaining ratio of water to coffee.

Make sure you give the filter basket a shake to evenly distribute the grounds in the filter for best results. Turn on your brewer and it’ll do the rest!
For a French Press brew we recommend a 1:12 coffee to water ratio with coffee ground at the consistency of sea salt. Add your grounds to the brewing chamber. then add twice the water as there are grounds to the chamber. Stir gently and allow to bloom for about 30 seconds. Place the top on the press and allow it to steep for 4 minutes. Plunge the press slowly and enjoy!
Superautos make brewing espresso easy. All you need to do is add beans to the hopper and press a button to pull yourself a shot. If your shot is a bit sour you’ll want to dial the grinder a little bit finer and try again. If it’s bitter, dial it a little coarser. You can find instructions on how to do this for your machine in the manual. Just remember to avoid oily beans that can clog your superauto’s grinder!

A coarse ground coffee, water, your favorite cold brewer, and time is about all you need! The result is ready to drink cold brew, or cold brew concentrate that can be diluted with water, depending on the ratio of water to coffee used. This method really highlights nutty and chocolate notes, and larger batches mean you can make a few days of coffee in one go!
