Description

This sparkling Ethiopia Kokosa from Camber Coffee caught out attention for its unique processing method. The Kenyan Process—a process developed to save water and that is renowned for the bright, clean fruity flavors it yields—is unique here because it is used by Heleanna Georgalis on her farm in Ethiopia. The results of her experimentation is a coffee that brings us notes of kumquat, chamomile and papaya.

Recommended Brew Methods

A 2:1 water-to-coffee ratio for your espresso shot is recommended. Using a scale to dial in your shots makes the process faster and more accurate. Your espresso grind should be very fine and powdery. Shots should take 30-40 seconds to brew and be thick and syrupy. Don’t stress, adjustments are always needed to get your shots pulling just right!

We recommend a 16:1 water to coffee ratio for your dosing. Use a scale for best results! For pour over, use a medium-coarse grind size somewhere between drip and press levels. Start with a short pour to wet the grounds and “bloom” the coffee for 30 seconds, followed by two more pours, divided in half to reach the appropriate remaining ratio of water to coffee.

Start with a 16:1 water-to-coffee ratio for your dosing. You’ll want a medium grind size for drip brewing that’s finer than what you’d use for pourover. Make sure you give the filter basket a shake to evenly distribute the grounds in the filter for best results. Turn on your brewer and it’ll do the rest!
