I can get doses level and to the exact weight I want with these. If ground coffee is higher than the basket, I "chop" it in a hash-pattern to settle it in, rather than use my fingers which I feel are probably pretty uneven.
I can also use the "Stockfleth's" kind of motion with these to get the coffee well-distributed around the edges of the basket.

As it turns out, I use these several times a day. They are great for leveling, but the most useful thing is that due to the various shapes, the are actually able to level *and *remove coffee from the portafilter underneath the level of the rim. So, if my ground coffee weighs 19 grams and I really want it to weigh 17, I can choose one of these and use it to level with a "concave" bowl in the center of the portafilter. I mean just a gentle amount. They can be used with a kind of "Stockfleth's" rotation for great packing. (Posted on 6/17/2013)
