Ingredients
Spiced caramel sauce to taste
2oz espresso
6oz steamed whole milk
Spiced Caramel Sauce Ingredients
¾ tsp ground cinnamon
¼ tsp ground cardamom
½ tsp freshly grated or ground nutmeg
¼ tsp ground cloves
¼ tsp freshly ground black paper
½ tsp ground ginger
½ tsp kosher salt
1 tsp vanilla
1 cup, plus 2 tbsp granulated sugar
½ cup warm heavy cream
¼ cup cold butter, cut into cubes
Spiced Caramel Sauce Instructions
Place sugar in a medium sized pot, bringing sugar to a boil. DO NOT STIR.
If crystals form on side of pot, gently brush with a pastry brush soaked in water to dissolve.
Boil sugar until it turns amber in color.
Remove from heat, slowly add warm cream, taking care not to burn yourself, as the sugar will spatter and bubble.
Continue whisking until mixture comes together.
In a heat resistant mixing bowl, add cold butter.
Place a mesh strainer over the top of the bowl.
Pour sugar and cream mixture over strainer, allowing all of it to drain over butter.
Let mixture sit until butter begins to melt.
Add spices, salt, and vanilla, and whisk until the butter has completely melted.
While still warm, pour caramel sauce into a mason jar.
Store in the refrigerator for up to two weeks. The sauce will thicken as it cools. If it becomes too thick to drizzle, place jar in a bowl of very hot water to allow sauce to thin.
