Toasted Marshmallow Latte (or Steamer!)

  • 2 oz espresso (optional)
  • ½ oz-1 oz toasted marshmallow syrup (to taste)
  • 6-8 oz steamed whole milk
  • Whipped cream
  • Torched jumbo marshmallow (for garnish)
Add toasted marshmallow syrup to 8oz mug. Add 2oz freshly brewed espresso to mug and swirl until syrup is combined. Froth milk in a steaming pitcher until hot to the touch. Tap and swirl frothing pitcher on counter until milk looks like wet, glossy paint. Pour into mug, leaving an inch of room. Top with whipped cream. Set jumbo marshmallow on top of whipped cream, and toast using a butane torch. If you are making a steamer, omit the espresso and steam 8oz of milk, rather than 6. Toasted Marshmallow Syrup
  • 6 jumbo marshmallows
  • 1 cup sugar
  • ¼ tsp vanilla extract
  • ¼ tsp kosher salt
  • 1 cup water
Thread marshmallows onto two bamboo skewers, and roast over the open flame of a stove or charcoal grill. You can also use a butane torch to roast marshmallows evenly. Remove from skewers and set aside. Combine sugar and water in a small saucepan. Bring to medium heat, stirring until sugar dissolves. Reduce heat to low and add marshmallows. Remove from heat if the mixture begins to bubble on the sides. Stir until marshmallows dissolve. Strain mixture through a mesh strainer into a bowl. Add salt and vanilla. Stir until salt is dissolved. Let cool. Pour syrup into mason jar or other airtight container and store in the refrigerator for up to 1 month.
