Ingredients
Meringue
- 1 large egg whites, at room temperature
- 1/4 cup granulated sugar
- 1/2 tsp espresso powder
- 1/4 tsp vanilla extract
- 1/8 tsp cream of tartar (or vinegar or lemon juice)
Espresso Martini
- 2 oz vodka
- 1 oz espresso chilled
- 3/4 oz Kahlua or other coffee liqueur
- Garnish: coffee beans for garnish
Instructions
Meringue
In a bowl, add the egg white, espresso powder, and vanilla.
Beat the egg white on low speed until foamy.
Next, gradually add the sugar, a tablespoon at a time.
Increase speed to high and beat until the mixture forms stiff, glossy peaks.
The sugar should be completely dissolved.
Espresso Martini
Add vodka, chilled espresso, Kahlua and ice cubes to a cocktail shaker.
Shake for 30 seconds.
Strain in a martini glass.
Fold the meringue on top of the Martini. Garnish with espresso powder.
