The ECF02 pairs a slim design with pressurized 51mm baskets that make grind adjustments more forgiving, plus a manual steam wand. The ECF03 adds a 58mm group, a front pressure gauge, and both pressurized and unpressurized baskets. Its solenoid valve helps leave drier coffee pucks for easier cleanup. Choose the ECF03 if you want more room to practice dialing in your espresso.
Fill the lower chamber with water to just below the safety valve. Fill the filter basket with moka-ground coffee, level it without tamping, and assemble the brewer securely. Use low-to-medium heat and remove it from the heat when the flow turns pale and begins sputtering. It makes concentrated coffee, not pump-driven espresso. The standard aluminum Moka Express is not directly compatible with induction cooktops.
Start with fresh coffee and a consistent coffee-to-water ratio. For drip or pour-over coffee, weak results may improve with a slightly finer grind or more coffee; bitter, drying results may improve with a slightly coarser grind. Change one variable at a time. With a moka pot, avoid tamping and excessive heat. With espresso, use the basket’s recommended dose and adjust grind size in small steps.
Follow the care instructions for your specific brewer. Descale electric machines with a manufacturer-approved product on the recommended schedule, and clean baskets and carafes regularly. Wipe and purge a steam wand after every use. Let a Bialetti Moka Express cool before disassembly, rinse it with warm water, and dry it thoroughly; keep it out of the dishwasher. Remove the Chemex Classic’s wooden collar before washing the glass.
