Grind size is the fastest way to change how your coffee tastes, and the easiest thing to get wrong. Every brew method has a range it works in, and most disappointing coffee at home comes from being outside that range.
The reason is contact time. A brew method that pushes water through coffee in 25 seconds needs a completely different particle size than one that soaks it for 18 hours. Match the grind to the method and most other problems get easier to solve.

Why Grind Size Matters More Than Almost Anything
Grinding coffee increases its surface area. The finer you grind, the more coffee surface is exposed to water, and the faster soluble compounds dissolve out of the grounds. That is the whole mechanism. Everything else follows from it.
The compounds do not all leave at the same rate. Acids and fruit character come out early, sugars and sweetness in the middle, and bitter, drying compounds late. Grind too coarse for your method and you stop the process early, which is why underextracted coffee tastes sour and thin. Grind too fine and you pull too much of the late material, which is why overextracted coffee tastes bitter and dry.
This is why grind size is the first thing to adjust when coffee tastes wrong. Water temperature, ratio, and technique all matter, but none of them move the needle as far as quickly. The Grind Size Spectrum
From finest to coarsest, the common reference points are powdered sugar, table salt, granulated sugar, coarse sand, and raw sugar or breadcrumbs. Turkish coffee sits at the powdered end. Cold brew sits at the coarse end. Everything else falls somewhere in between, and the ordering is worth memorizing because it tells you which direction to move when something tastes off.
What follows is the working range for each method. Treat these as starting points rather than targets. Your beans, your water, and your equipment all shift where the sweet spot actually lands.
Espresso
Espresso is the finest grind most people will use, somewhere around table salt or a little finer. It has to be, because you are forcing water through a compressed puck in roughly 25 to 30 seconds and need enough resistance to build pressure.
Espresso is also the least forgiving. A change of one or two clicks on a good grinder is a visible difference in shot time. This is the method where a stepless or micro-stepped espresso grinder actually earns its price, because the increments between settings on a general purpose grinder are often too coarse to land on the right setting at all.
Roast level shifts this. Lighter roasts are denser and harder to extract, so they usually want a finer setting than a dark roast of the same origin. Our guide to working with light roast espresso covers that adjustment in more detail.
Moka Pot
Moka pot sits just coarser than espresso and finer than drip. The stovetop brewer builds modest pressure, well below a real espresso machine, so it needs less resistance in the basket. Grind at true espresso fineness and the pot will struggle, sputter, and produce something scorched and bitter.
A useful check: fill the basket, level it, and do not tamp. If the water is having obvious trouble getting through and the pot is hissing, go coarser. Browse stove top brewers if you are choosing a pot.
Pour Over
Pour over runs medium to medium-fine, roughly granulated sugar, though the specific brewer matters. A cone with a single small hole like a V60 drains faster and generally wants a slightly finer grind than a flat bottom brewer with multiple holes, which holds water longer on its own.
Total brew time is your feedback. A single cup V60 that finishes in under two minutes is running too fast and probably needs a finer grind. Automatic Drip
Automatic drip wants medium, close to coarse sand. Most drip machines control their own contact time and cannot compensate for a grind that is far off, which is why the same beans that make excellent pour over can make flat drip coffee if you carry the setting over unchanged.
Basket shape is worth accounting for. Flat bottom baskets hold a deeper, more even bed and tolerate a slightly finer grind. Cone baskets drain faster in the middle and generally do better a touch coarser. French Press
French press needs a coarse grind, around raw sugar or breadcrumbs. Two reasons. The coffee steeps for four minutes or more, so fine particles would overextract badly in that time. And the metal mesh filter only catches particles above a certain size, so fines pass straight through into the cup and turn to sludge at the bottom.
Muddy, gritty French press is almost always a grind problem rather than a technique problem. Cold Brew
Cold brew is the coarsest setting you will use, at or beyond the coarse end of French press. Extraction with cold water is slow and inefficient, which is why the steep runs 12 to 24 hours. That long contact time is exactly why the grind has to be coarse. Fine grounds left in cold water overnight produce a harsh, muddy concentrate and make filtering miserable.

Why Grinder Numbers Are Not Universal
A setting of 15 on one grinder has no relationship to 15 on another. Grinder settings are arbitrary marks on that specific machine, and the actual particle size at any given number depends on burr geometry, burr diameter, motor speed, and how the manufacturer chose to space the steps.
This applies within a single brand too. Two units of the same model can differ because of where the burrs sit at assembly, which is why some grinders ship with a calibration procedure. Recipes that give you a number instead of a description are close to useless across different equipment.
What does transfer is direction and relative distance. If a recipe says to go two steps finer than your drip setting, that instruction works on any grinder. Keep your own notes in your own numbers and treat published settings as a rough starting region.
How to Judge Grind Size by Feel
Rub a pinch of grounds between your thumb and forefinger. Espresso feels like flour with a faint grit and clumps slightly under pressure. Pour over feels distinctly grainy with individual particles you can identify. French press feels chunky and separates cleanly with no tendency to pack together.
Looking at grounds on a white surface helps too. You want a population that looks broadly similar in size. A mix of visible large chunks alongside fine powder means the grinder is producing an uneven distribution, and no setting will fix that. That is usually a blade versus burr issue, or worn burrs.
Above all, adjust in one direction at a time and taste the result. Change grind, brew, taste, then change again. Moving grind and ratio together leaves you with no way to know which change did what.
