How to Dial In Pour Over Coffee

Pour over gets described as fussy, but the actual process is short and the number of things you can change is small. Once you know what each variable does, dialing in a new coffee takes two or three brews.

The goal is not to follow a recipe perfectly. It is to have a repeatable baseline you can adjust deliberately when the cup is not right.


The Five Variables

Everything you control in pour over comes down to ratio, water temperature, grind size, bloom, and pour structure. Total brew time is not really a variable you set directly. It is the result of the others, which makes it your most useful diagnostic.

Lock four of these and change one at a time. Changing two at once is the single most common reason people brew for months without improving, because there is no way to attribute the result to anything.

You need a scale for this. Not because precision is virtuous, but because without weighing coffee and water you are not actually holding anything constant between brews.


Choosing Your Ratio

Start at 1:16, meaning one gram of coffee for every sixteen grams of water. For a single cup that is roughly 22 grams of coffee to 350 grams of water. This lands comfortably inside the range the SCA considers well balanced, covered in our article on the Gold Cup Standard.

Ratio controls strength, which is a separate thing from extraction. A 1:14 brew is stronger and heavier. A 1:17 brew is lighter and more delicate. Neither is more or less extracted on its own. If your coffee tastes weak and also sour, that is extraction and the grind is the fix. If it tastes correct but too light, that is strength and the ratio is the fix.

Water Temperature

Aim for 195 to 205 degrees Fahrenheit. Hotter water extracts faster, so temperature and grind size push in the same direction and can be used to compensate for each other.

Use the top of the range for light roasts, which are dense and resist extraction. Use the lower end for dark roasts, which give up their solubles readily and turn bitter and ashy when brewed too hot. If your grinder cannot go fine enough for a light roast, raising temperature is a legitimate workaround.

A variable temperature kettle makes this controllable. Without one, boiling and resting the kettle for about 30 seconds gets you into range for most coffees.

Water quality matters as much as temperature. Heavily filtered or distilled water produces flat, hollow coffee because extraction relies on dissolved minerals. Hard water mutes acidity and builds scale in your kettle.


Grind Size for Pour Over

Start at medium, roughly granulated sugar, and adjust from there. Grind is your primary extraction control and the variable you should touch first when the taste is wrong.

The brewer changes where you start. A V60 or similar single-hole cone drains quickly and generally wants a finer setting. A flat bottom brewer restricts flow on its own and does better slightly coarser. Our grind size guide has the full spectrum across methods.

Move in small steps. On most grinders, two or three clicks is a meaningful change for pour over. Jumping five or more overshoots and makes it hard to find your way back.


The Bloom

Pour roughly two to three times the coffee weight in water, so 45 to 60 grams for a 22 gram dose, and wait 30 to 45 seconds. Freshly roasted coffee holds carbon dioxide, and that gas physically pushes water away from the grounds. The bloom lets it escape before the main pour.

Wet all the grounds during the bloom. Dry pockets stay dry through the whole brew and contribute nothing but dilution. A gentle swirl or a quick stir is more reliable than trying to hit every particle with the pour.

Pour Technique and Pulse Structure

After the bloom, you can add the remaining water in one continuous pour or in several pulses. Continuous pouring keeps the bed submerged and generally produces a faster brew with a heavier body. Pulsing in two or three additions extends contact time and tends to increase extraction and clarity.

Pour in slow concentric circles from the center outward, and stop short of the filter edge. Water poured directly onto the paper runs down the side without passing through coffee, which dilutes the cup and leaves grounds stranded high on the wall.

Keep the flow rate steady. A gooseneck kettle exists for exactly this and is the single piece of gear that most improves pour over consistency for people who already own a decent grinder.


Reading Total Brew Time

For a single cup, target roughly two and a half to three and a half minutes from first pour to last drip. Larger batches run longer, and the exact number depends on your brewer, so what matters is where your brews land relative to each other.

Draining much faster than expected means water is moving through too easily, so grind finer. Stalling well past your target means the bed is too restrictive, so grind coarser. A sudden stall on a grind setting that worked yesterday usually points to fines clogging the filter, which is a grinder consistency problem rather than a setting problem.

Look at the spent bed when it finishes. Flat and even is what you want. A deep crater in the middle or coffee stranded up the sides means the pour was uneven.


Adjusting from Taste

Sour, sharp, thin, or even salty means underextraction. Grind finer, raise temperature, or extend contact time with an extra pulse. Change one of those, not all three.

Bitter, drying, hollow, or ashy means overextraction. Grind coarser, lower temperature, or shorten the brew.

Balanced but weak means the ratio is too wide. Use less water or more coffee, and leave the grind where it is.

Keep short notes: coffee, dose, water, grind setting, and brew time. Three brews of notes will get you to a repeatable result faster than a dozen brews without them.
