The Three Features Worth Paying For
PID Temperature Control
PID controllers are a flat upgrade over a standard thermostat, and really represent the standard for any reasonably high-end espresso machine. A standard thermostat kicks in when the temperature probe in the boiler reaches a low point, so instead of providing consistent temperatures, the heat of the water will bounce around, often dipping below the minimum threshold for the thermostat. A PID controller uses algorithmic programming to activate the heating element such that it holds the water at a constant temperature. Machines handle this differently, some manage the water at the boiler, others use probes at the boiler and group along with heating elements in that endpoint. There are also different programming methods offered on different machines, but the important thing is that your next machine have PID controlled temps, regardless of the implementation. The practical impact here is that you can be sure that when you flip the brew lever you’re getting water at the right temperature for your brewing. Shot Timer
Shot timers are the simplest feature on this list, but they are still high-impact. These little displays come in many shapes and forms, but they kick on when you start to pull a shot, then stop when you turn off the flow of water. We recommend looking for this feature because you will absolutely want to ensure that your shots pull at specific times to maintain consistency and quality. While you could use an external timer in a pinch, espresso shots are measured in seconds, so having something built-in is key for pinpoint timing accuracy. As Sean puts it, “A shot timer is always nice to have on the machine. You certainly need to time your shots, whether that is a shot timer integrated into the machine, a feature on your scale, or a standalone stopwatch.”
Flow & Pressure Control
Pressure or flow control (yes, they do differ!) is one of the few modern, buzzwordy features that we actually find truly worth it. These systems essentially allow you to control the pressure ramp of the pump or water flow into the portafilter. Every machine has a unique pressure ramp, and by giving you control over it you can recreate the shot quality of literally any kind of espresso machine on the market (assuming it has solid, consistent water temperatures). This level of control allows you to bring out specific flavors in coffee, but it can also help you manage issues like channeling as you get better at prepping your pucks. Note that pressure profiling usually puts control over the pump into a paddle, whereas flow control will give you control of water flow at the group head with a pin or similar mechanism tied to the lever/paddle.
Different groups and portafilter designs can have an effect here too, but if you have that ability to control pressures then you can account for all of these other elements. John’s take - “For the coffee nerd, flow control opens up the ability to chase nuanced flavor from single-origin coffees like the difference between a stewed strawberry and a candied strawberry tasting note. For the everyday drinker, flow control offers more consistently good espresso with less waste, saving shots that are almost dialed in but not quite there.”

The Details Nobody Talks About
There are other odds and ends worth considering for your next machine. Water tank and drip tray access genuinely matter for daily workflow. Front- or side-loading water tanks may require more access around the sides of the machine, but they are also easier to work with under cabinets than an overhead tank. Drip trays sometimes slide right out, and sometimes have more involved mechanisms to remove them, important considering how frequently you’ll want to dump and rinse them. Steam wands are another factor to consider - insulated wands that prevent burns are very nice to have, and having access to several steam tips will give you more control over the speed that your milk steams at (faster is not always better, especially if you’re just starting out). Finally, scheduling, auto-on, and eco/standby modes are worth taking a look at. These features can all make heat up in the morning a less time-consuming part of the process.
