To my understanding, the process involves steeping green coffee beans in hot water, then running the resulting extract through carbon filters that strip out caffeine. A new batch of green beans is then washed in the caffeine-free extract, which pulls the caffeine from the beans and into the extract, leaving caffeine-free beans ready for roasting.
