Setup & First Use

Before using the Ascaso H64 for the first time, read all instructions carefully. Place the grinder on a flat, stable surface at a comfortable working height, positioned as close to your espresso machine as practical. The H64 operates at 120V and is intended for household use only. Do not use extension cords or multi-socket adapters.

Assembling the Hopper

Remove the hopper fixing screw, insert the hopper by aligning the holes, and replace the screw to secure it. Place the hopper lid on top. Fill the hopper with the amount of whole bean coffee you estimate using during the session.

Attaching the Fork

The H64 includes two fork options: a filter holder fork for portafilter grinding and a cup fork for single dose use. Attach the appropriate fork to the outlet using the fork fixing bolt. When grinding into a portafilter, position the portafilter under the coffee outlet spout guided by the filter holder fork.

First Power-On

Connect the power cable to the mains. Press the ON/OFF switch — the built-in LED will illuminate, indicating the grinder is ready. The machine will start up in whatever dosing mode was last used.

Initial Grind Adjustment

The H64 ships with the grind set to a middle (intermediate) calibration from the factory. A preliminary adjustment is required to reach your optimal grind point. Use the micrometric adjustment knob on the upper right of the machine — turn clockwise for a finer grind, counterclockwise for coarser. Make adjustments in small increments, grinding and evaluating the result each time. Do not turn the adjustment knob fully with the motor switched off, as this can jam the machine.

Tutorials & Training

Understanding the Four Dosing Modes

The H64 operates in four modes, selectable using the S1 and S2 buttons on the display. The machine always starts in the last mode used.

  • Continuous Mode (00.0): The motor runs as long as the Pulse button is held down. The display counts upward as a timer. Release to stop. Use S1 or S2 to change modes.
  • Dose 1 (D1): A timed dose programmed via the Setup menu. Press the Pulse button once to start; the display counts down to zero and stops automatically. Double-press to stop early.
  • Dose 2 (D2): A second independently programmed timed dose. Operates the same as D1. Note: in the grinder's internal counter, D2 counts as 2 coffees per activation.
  • Custom Dose (dC): A third programmable timed dose. Operates the same as D1 and D2.

Programming Dose Times

To access the Setup menu, press and hold both S1 and S2 simultaneously for 3 seconds until "Set" appears on the display. Press S1 to scroll through parameters; press S2 to edit the highlighted parameter. To exit, stop pressing both buttons for 3 seconds. The available parameters are:

  • D1: Timed dose 1, adjustable in 0.1-second increments.
  • D2: Timed dose 2, adjustable in 0.1-second increments.
  • dC: Custom dose time, adjustable in 0.1-second increments.
  • OFF (0–600): Standby timer in minutes. Set to 0 to disable standby.
  • Ct: Total shot counter (read-only display).
  • CP: Partial shot counter (read-only display).
  • rES: Factory reset and partial counter reset (On/Off).

Ascaso recommends setting a starting dose time equivalent to approximately 7 grams of coffee, which is typically between 20 and 25 seconds. Adjust from there based on your specific coffee and extraction results.

Dialing In Grind Size

The correct grind point depends on the coffee blend, roast level, ambient humidity, and the condition of your espresso machine. In more humid environments, a coarser grind is generally needed. Daily adjustment is recommended for consistent results. Use the appearance and taste of the espresso as your guide: a grind that is too coarse produces light, watery espresso with thin crema and little aroma; a grind that is too fine produces short, overly dense, bitter shots. Adjust in small increments and allow the burrs to clear any transition grinds before evaluating the result.

Single Dose Mode

The H64 includes a single dose cup and cup fork for grinding outside the portafilter. Attach the cup fork, place the single dose cup under the outlet, and use Continuous Mode to grind by holding the Pulse button for the desired duration. This is ideal for filter brewing methods where precise, weighed doses are preferred over timed doses.

Cleaning & Maintenance

Important Safety Note

Always switch the grinder off and unplug it from the mains before any cleaning or maintenance. Never carry out cleaning or maintenance with the grinder plugged in. Do not immerse any part of the grinder in water. Do not handle the grinder with wet hands.

Weekly — Hopper Cleaning

Remove the hopper from its location — always switch the grinder off before disassembling the hopper. Wash the hopper with a damp cloth or warm soapy water to remove oily residues left by coffee beans. Rinse thoroughly and dry completely before reinstalling.

Exterior Cleaning

Wipe down the exterior of the grinder using a brush or a soft cloth lightly dampened with water and soap. Do not use abrasive cleaners or pads.

Burr Wear and Replacement

Monitor the burrs regularly for wear. As the 64mm flat steel burrs wear down, grind consistency and espresso quality will decline. Ascaso recommends replacing the burrs after grinding between 400 and 600 kg of coffee. Burr replacement should be performed with the grinder switched off and unplugged. For burr replacement assistance, contact Seattle Coffee Gear or reach out to Ascaso USA at ascaso-usa.com.

Troubleshooting

Espresso Pulling Too Fast / Thin Crema

The grind is too coarse. Turn the micrometric adjustment knob clockwise in small increments to make the grind finer. Pull a test shot after each adjustment to evaluate the change. Also confirm the dose time is set to produce approximately 7 grams of coffee — an insufficient dose regardless of grind size will result in a fast, underdeveloped shot.

Espresso Pulling Too Slowly / Dense and Bitter

The grind is too fine. Turn the adjustment knob counterclockwise to coarsen the grind incrementally. If you have recently changed coffee to a different roast level or blend, a grind adjustment is expected — lighter roasts typically require a finer grind than darker roasts, and higher-humidity environments call for a coarser setting.

Grinder Is Jammed / Knob Won't Turn

This is most commonly caused by turning the adjustment knob all the way to its limit while the motor is off. Do not turn the knob to its extreme position with the motor stopped. If the grinder is jammed, do not force the knob. Switch off and unplug the machine, then contact Seattle Coffee Gear or Ascaso USA at ascaso-usa.com for assistance.

Dose Timing Is Inconsistent or Drifting

As burrs wear over time, the same timed dose will produce progressively less coffee as the grind becomes less efficient. If you notice your programmed doses producing less grounds than expected without a change in grind setting, check burr wear. Grind output can also vary with changes in coffee freshness, roast level, and ambient humidity — periodic dose time recalibration is normal.

Grinder Not Starting

Confirm the ON/OFF switch LED is illuminated. If the machine does not respond to the Pulse button, check that the grinder is fully plugged in and that the hopper is properly seated and secured. In the event of malfunction, switch off and unplug the machine immediately — do not attempt to repair it yourself. Contact Seattle Coffee Gear or reach Ascaso USA at ascaso-usa.com for service.

Display or Programming Not Responding

If the Setup menu is unresponsive, confirm you are pressing and holding both S1 and S2 simultaneously for the full 3 seconds. The display will show "Set" when the menu is successfully entered. If the display is blank or unresponsive with the machine powered on, switch off, unplug, and contact support. To restore factory settings, access Setup and navigate to "rES" and set to "On."
