Setup & First Use

Before using the Vario W+ for the first time, remove all packaging and hand-wash the bean hopper, hopper lid, and grounds bin (or dosing cup if included) in warm soapy water. Rinse and let air dry completely. Do not wash burrs with water — this will cause rust. Do not put any plastic parts in the dishwasher.

Wash the hopper, grounds bin, and PortaHolder in warm soapy water. Do not wash the burrs or grind adjustment assembly with water.

Season new burrs before your first real grind: run 30–50g of whole beans through and discard the output. New burrs have micro-burrs on the cutting edges that affect consistency until broken in. After seasoning, the grinder is ready to dial in.

Place the grinder on a stable, flat surface near a standard household outlet. Baratza grinders are designed for home use and operate on standard 120V AC power. Grind a dose at a time — these grinders are not designed for continuous extended runs.

The Vario W+ is built on the Vario platform with two key differences from the Vario+: it uses 54mm flat steel burrs instead of ceramic, and it adds an integrated scale for weight-based dosing. The scale allows the grinder to stop automatically when a target dose weight is reached, eliminating the need for a separate scale in the espresso workflow.

Steel flat burrs on the Vario W+ produce a slightly different flavor profile than the Vario+'s ceramic burrs — generally a bit more body and texture. Both are 54mm flat burrs with macro+micro adjustment and the same 230-setting range.

To use weight-based dosing: place the grounds bin or portafilter on the scale platform, tare it to zero, enter your target dose weight using the controls, and press start. The grinder doses to within 0.1–0.3g of your target and stops.

Weight-Based Dosing

Set your target dose weight on the display. Place your portafilter or grounds bin on the scale platform and tare. Press the grind button — the grinder runs until the target weight is reached and stops automatically. Three weight presets can be saved for quick selection between different doses. Recalibrate the scale periodically using the calibration procedure in the manual at baratza.com.

Steel vs. Ceramic Flat Burrs

The Vario W+'s 54mm flat steel burrs produce a rich, full-bodied cup with slightly more textural complexity than ceramic flat burrs. Steel burrs also season and reach peak performance faster than ceramic. They require slightly more frequent replacement over a very long service life, but for home use this is rarely relevant.

Macro + Micro Adjustment

Same dual-lever system as the Vario+: macro lever for large range changes, micro lever for fine adjustments within a macro step. Use the scale feedback to guide adjustments — if your dose is on target but the shot runs fast, go finer with the micro lever; if it runs slow, go coarser.

Grounds Retention

The Vario platform retains 1–2g of grounds between sessions — consistent and predictable. Account for this in single-dosing workflows: your first grind of a new session includes a small amount from the previous session. For most users this is acceptable; for coffee enthusiasts who want zero retention, purging 2–3g before weighing the dose is the cleanest approach.

Cleaning & Maintenance

Weekly — Burr and Chamber Brush

Unplug the grinder. Remove the hopper and set the shut-off knob to closed. Use the included burr removal tool to remove the upper burr carrier by aligning the tool notches with the wings. Brush the flat burrs, grinding chamber, and grounds chute with a dry stiff brush. Do not wash the burrs with water. Reinstall the upper burr carrier firmly until seated.

Monthly — Hopper and Bin

Hand-wash the hopper and grounds bin with warm soapy water. Rinse and air dry completely. Do not put in the dishwasher.

Quarterly — Cleaning Tablets

Run a grinder cleaning tablet cycle through at a medium setting to remove coffee oil buildup from the burr surfaces and grinding chamber. Follow with 30g of coffee beans to purge any residue.

PortaHolder

Wash the PortaHolder by hand with warm soapy water. The arms can be removed for easier cleaning. Do not put in the dishwasher.

Troubleshooting

Scale Dosing Inaccurate

Calibrate the scale using the procedure in the Vario W+ manual at baratza.com. Ensure the grinder is on a stable, level surface during use. Keep the scale platform and grounds tray area clean of loose grounds — debris affects weighing accuracy.

Grinder Won't Start

Confirm the hopper is properly installed and locked. Ensure shut-off knob is open. Check power.

Grind Adjustment Not Producing Expected Results

Use macro lever for large range changes, micro lever for fine-tuning. Flat burr grinders are more sensitive to bean density — reprogram dose weights when switching beans.
