Before using the Vario+ for the first time, remove all packaging and hand-wash the bean hopper, hopper lid, and grounds bin (or dosing cup if included) in warm soapy water. Rinse and let air dry completely. Do not wash burrs with water — this will cause rust. Do not put any plastic parts in the dishwasher.
Also wash the grounds bin and PortaHolder in warm soapy water. Do not wash the hopper with the bean shut-off knob submerged — hand-wipe instead if needed. Do not wash burrs with water.
Season new burrs before your first real grind: run 30–50g of whole beans through and discard the output. New burrs have micro-burrs on the cutting edges that affect consistency until broken in. After seasoning, the grinder is ready to dial in.
Place the grinder on a stable, flat surface near a standard household outlet. Baratza grinders are designed for home use and operate on standard 120V AC power. Grind a dose at a time — these grinders are not designed for continuous extended runs.
The Vario+ uses 54mm ceramic flat burrs manufactured by Ditting — a Swiss precision burr company. Ceramic burrs have exceptional edge retention and run cooler than steel burrs. They produce a more unimodal particle distribution (less fines, more uniform particle size) than conical burrs, which translates to a cleaner, more transparent cup in both filter and espresso.
Grind adjustment uses two levers: the macro lever on the back for large range changes, and the micro lever on the front for fine-tuning. The Vario+ has 230 total settings (roughly 8 macro positions × ~30 micro steps each). The grinder ships with the PortaHolder installed — to grind into the grounds bin instead, pull the PortaHolder straight out and insert the grounds bin.
The Vario+ has three programmable timed dose buttons on the front panel. Set each by holding the button until it flashes, then grinding the desired dose volume and pressing the button again to save. This allows repeatable timed doses for different brew methods.
