Setup & First Use

Before using the De'Longhi La Specialista Touch for the first time, wash and dry all accessories — including the water tank — with warm water and mild detergent. Place the machine on a flat, stable surface with adequate ventilation on all sides. The machine operates at 120V and should be plugged into a grounded outlet. Do not use an extension cord.

First-Time Setup

Insert the drip tray and remove any sticker from the touchscreen display. Turn the main switch on the side of the machine to the on position, then press the ON/Stand-by button on the front panel. The 3.5" display will illuminate and walk you through initial setup: select your language, then choose your preferred temperature unit (Fahrenheit or Celsius).

Setting Water Hardness

The machine will guide you to set your water hardness level during first-time setup. Remove the included hardness test strip from its packaging, immerse it completely in a glass of fresh water for one second, remove it, and shake lightly. Compare the result to the chart on the strip packaging (Level 1 = soft, Level 2 = medium, Level 3 = hard/very hard) and set the corresponding level in the on-screen menu. Setting the correct water hardness helps the machine determine when descaling is needed.

Initial Rinse

After completing setup, the machine will prompt you to fill the water tank to the MAX level and run an initial rinse cycle. Place a container under the hot water spout, press Start when prompted, and allow the rinse to complete automatically. Remove and empty the container. The machine is now ready for use.

Loading Beans

Open the bean hopper lid on top of the machine and fill with whole bean coffee. The integrated burr grinder will grind fresh to order with each dose. For best results, only add beans you expect to use within a few days.

Brewing Espresso — Step by Step

The La Specialista Touch guides you through each step on the display. The basic workflow is: select your drink on the touchscreen, select your filter (1-cup or 2-cup), load the portafilter onto the grinder, grind, tamp, attach to the machine, and start delivery.

  1. Select the desired drink from the homepage. The display will show the recommended settings.
  2. Choose either the 1-cup or 2-cup single-wall filter basket and place it in the portafilter. Insert the dosing funnel by pushing then rotating until it locks.
  3. Attach the loaded portafilter to the grinder outlet by aligning it and pressing until you hear a click — grinding starts and stops automatically. To stop grinding early, press the portafilter again.
  4. Remove the portafilter and tap it gently to level the grounds in the dosing funnel. Remove the funnel. Bring the tamping lever down completely to tamp. For best results, press the lever down twice, returning to the rest position between strokes. Keep the lever down as you draw the portafilter away to preserve the smooth tamped surface.
  5. Check that the dose is at the correct level — the filter baskets have an interior mark indicating the ideal dose level. Adjust the grinding time setting on the display if needed (the dose setting screen is accessed by tapping the portafilter image on the display; increase or decrease in 0.5-second increments).
  6. Attach the portafilter to the coffee spout by aligning it with the insert mark and rotating to the close position. Press Start on the display — delivery begins and stops automatically.

Adjusting Grind Size

The grind size dial is located inside the bean hopper and should only be adjusted while the grinder is running. Finer grind settings produce slower, more intense extraction; coarser settings produce faster, lighter extraction. When using beans for the first time, start at a mid-range setting (around 9 on the dial) and evaluate after pulling a shot. If espresso flows too slowly, adjust one click coarser; if too fast, one click finer. Allow at least 2 cups to evaluate any grind change, as transition grinds will pass through first. Darker roasts generally benefit from coarser settings; lighter roasts from finer settings.

Bean Adapt Technology

Bean Adapt is De'Longhi's guided dialing-in system built into the touchscreen. It walks you through testing your current espresso result and recommends adjustments to grind size, dose level, pre-infusion setting, and brew temperature based on your feedback. After running Bean Adapt for a given coffee, you can save that profile to the machine with a custom name — the profile then appears on the homepage for future brews with the same beans. This is especially useful when switching between different coffees or roast levels.

Brew Temperature

The La Specialista Touch features 4 infusion temperature profiles accessible from the touchscreen. The machine uses PID temperature control to maintain consistent water temperature throughout the extraction. As a general guide: darker roasts extract well at lower temperatures; lighter roasts benefit from higher temperatures. Use Bean Adapt to find the optimal temperature for each specific coffee you use.

Pre-Infusion

Pre-infusion can be toggled on or off for each drink via the settings on the display. When enabled, the machine delivers a small amount of water at low pressure before the main extraction to saturate the grounds, which can improve evenness of extraction and reduce channeling — particularly helpful with lighter roasted coffees.

Cold Brew in Under 5 Minutes

The La Specialista Touch features Cold Extraction Technology that bypasses the thermoblock to brew at cool temperatures and optimized pressure. Select Cold Brew from the drink menu, place a glass of ice under the spout, and press Start. The entire process takes under 5 minutes and delivers a concentrated cold brew-style drink without requiring overnight steeping.

Auto LatteArt Steam Wand

For milk-based drinks, the Auto LatteArt wand handles texturing automatically. Select your drink on the display and choose your milk type (dairy or plant-based), froth level (5 options), and temperature (4 options). Fill the included stainless steel milk jug with cold milk fresh from the refrigerator — do not overfill, as milk will expand during frothing. Place the jug under the steam wand and press Start on the display. The wand will froth and heat the milk automatically and stop when complete. For manual frothing, switch the wand to the M (manual) position.

Saving Custom Drink Recipes

All 10 preset drinks — Espresso, Americano, Long Black, Cold Brew, Cappuccino, Latte, Latte Macchiato, Flat White, Hot Milk, and Hot Water — can be customized and saved. Adjust any setting (volume, temperature, grind, strength, froth level) and save as your personal default for that drink. Changes will be remembered until you reset or adjust again.

Cleaning & Maintenance

Important Safety Note

Always switch the machine off and allow it to cool before cleaning any external parts. Never immerse the machine in water. Do not use solvents, abrasive detergents, or alcohol to clean the machine. Do not use metal objects to remove encrustations or coffee deposits.

After Every Use

Wipe the steam wand immediately after each use with a damp cloth to remove milk residue before it dries. Then open the steam valve briefly to purge any remaining milk from inside the wand. When the wand has cooled, use the included cleaning needle to clear any blocked holes in the steam tip. Knock spent grounds from the portafilter, then rinse the portafilter and filter baskets under warm running water. Empty and wipe the drip tray.

Portafilter and Filter Baskets

Wash the portafilter and filter baskets with warm soapy water periodically to remove coffee oil buildup. Do not use metal scrubbers. Rinse thoroughly. The portafilter and baskets can also be cleaned in the dishwasher on the top rack.

Grinder Cleaning

Use the included brush to clean the grinder attachment area and coffee funnel regularly. Coffee oils and fine grounds accumulate in the grinder outlet over time and can affect grind consistency and flavor. The burrs are a wear item — with regular use the grind quantity setting will gradually need to be turned higher to maintain the same dose. When the setting approaches the top of the recommended range, the machine may prompt you that burr replacement is needed. Contact De'Longhi Consumer Support for service.

Water Tank

Remove and rinse the water tank with fresh water weekly. Do not use soap inside the tank. Dry before replacing. If the machine will not be used for more than a week, empty the water tank and leave it dry. Before using again after an extended period, run a rinse cycle.

Coffee Spout Cleaning

When the display indicates the coffee circuit needs cleaning, use De'Longhi cleaning tablets to run the cleaning cycle. Follow the on-screen prompts — the machine guides you through the process step by step. The cleaning cycle can also be run at any time without waiting for the prompt.

Descaling

The machine monitors usage and will display a descale reminder based on your water hardness setting. When prompted, use De'Longhi Ecodecalk descaler — do not use third-party descaling products, as this may cause damage not covered under warranty. Follow the on-screen descaling cycle prompts, which guide you step by step through the full process including fill levels, cycle progression, and the final rinse. The descaling cycle takes approximately 20 minutes.

Troubleshooting

No Espresso Is Delivered

The most common causes are an empty water tank, an incorrectly seated water tank (press it down firmly until the valves open), or a grind setting that is too fine — which can compact the puck so densely that water cannot pass through. Check the water tank first, then try adjusting the grind one click coarser. Also confirm the portafilter is fully locked into the coffee spout.

Espresso Dripping From the Edges of the Portafilter

This typically means the portafilter is not fully locked into the coffee spout, or there is coffee residue on the group seal or filter basket rim preventing a proper seal. Clean the rim of the filter basket and the group seal area, ensure there are no loose grounds around the basket edge, and reattach the portafilter firmly.

Portafilter Cannot Be Attached

The portafilter may have residual coffee grounds in the attachment threads or the group seal may be obstructed. Clean the portafilter bayonet and the group area with the included brush, then try again. Do not force the portafilter.

Espresso Flowing Too Fast / Weak and Watery

The grind is too coarse, the dose is too low, or the tamp was not firm enough. Adjust the grind one click finer, check that the dose reaches the level mark inside the filter basket, and ensure the tamping lever is pressed fully down. Evaluate after at least 2 shots.

Espresso Flowing Too Slowly / Bitter

The grind is too fine, creating too much resistance. Adjust one click coarser and evaluate after 2 shots. Also confirm the filter basket is clean and not clogged — rinse it under running water if needed.

Water in the Drip Tray

Some water in the drip tray is normal — the machine routes rinse water and any brew head purge water there. Empty the drip tray regularly. If the tray fills unusually quickly, check that the portafilter is seating properly and that the spout and group area are clean.

Steam Wand Not Producing Steam or Producing Weak Steam

Allow the machine sufficient time to heat up after switching on — the display indicates when the machine is ready. If the steam tip is blocked, clean the holes with the included steam tip cleaning needle. If the issue persists, purge the wand briefly with steam to clear any internal blockage.

Display Showing Descale or Clean Indicator

Run the respective maintenance cycle promptly. Descaling and cleaning cycles are guided on-screen. For descaling, use only De'Longhi Ecodecalk descaler. Delaying maintenance can affect coffee quality and machine longevity.
