The Rocket Espresso Mozzafiato FAST R Espresso Machine offers breathtaking style and the espresso quality to match. Equipped with Rocket's in-house brew group, the Mozzafiato FAST promises faster heat-up times and better temperature control than before. A new PID controller behind the drip tray helps make this magic happen, as does its insulated heat-exchanger boiler layout. The R model also features a rotary pump for quieter brewing and the ability to plumb directly to an existing water line. The Mozzafiato FAST comes with soft touch controls, and either satin black or polished steel finishes.

What's In The Box
The Rocket Espresso Mozzafiato FAST R includes: espresso machine, 58mm double-spout portafilter, single and double filter baskets, backflush disc, 58mm tamper, scoop, cup rail, and cleaning brush.

Setup & First Use

Initial Setup

Fill the internal reservoir. Run water through the system without coffee. Allow 25–30 minutes for the machine to reach stable operating temperature. The rotary pump also allows optional direct plumbing to a water line for uninterrupted brewing.

PID Temperature Control

The Mozzafiato FAST R features a PID controller for precise boiler temperature management. The PID display is mounted on the machine — set your target brew temperature in one-degree increments. Factory default is approximately 200°F (93°C).

Shot Timer

The built-in shot timer starts when the pump activates and displays elapsed time. Use it alongside a scale for recipe development and consistency.

Cooling Flush

Even with a PID, an HX machine can overshoot brew temperature after idle periods. Run a 2–3 second cooling flush before each shot if the machine has been idle for 15+ minutes.

PID vs. Temperature Surfing

The Mozzafiato FAST R's PID eliminates the need for temperature surfing required on non-PID HX machines. Set your target temperature, use a consistent cooling flush protocol, and your brew temperature will be stable and repeatable.

Rotary vs. Vibration Pump

The rotary pump also allows optional direct plumbing to a water line for uninterrupted brewing.

E61 Group Head Pre-Infusion

Rocket's modified E61 group incorporates pre-infusion — water gently saturates the puck at low pressure before full extraction begins. This is passive and automatic; no settings are required.

Cleaning & Maintenance

Daily Cleaning

Wipe the steam wand and purge after each use. Remove the portafilter and rinse the basket under warm water. Wipe the group head area and drip tray.

Weekly Backflushing

Backflush with the blind basket and espresso cleaner. Run 5–6 cycles of 10 seconds on / 10 seconds off, then 5–6 rinse cycles with plain water.

PID Controller

The PID unit requires no maintenance. If the display becomes hard to read, clean the screen area with a dry cloth.

Troubleshooting

PID Not Holding Temperature

Small temperature fluctuations (±2–3°F) are normal. Wider swings may indicate a boiler probe issue

Shot Timer Not Starting

The shot timer activates when the brew switch triggers the pump. If the timer doesn't start, check that the switch is fully engaged.

Shots Running Too Hot After Idle

Apply a longer cooling flush — 3–5 seconds — after extended idle. The HX circuit stores extra heat; the flush removes it before brewing.

Plumbing Leak at Water Line Connection

Rotary: Verify all plumbing fittings are secure and compatible with your water line. Use thread seal tape on all threaded connections.
