The Zenith HS Doser is a commercial grinder designed for café service with a rotary doser for traditional barista-workflow dispensing.

Setup & First Use

Doser vs. On-Demand Grinding

The Zenith HS Doser uses a traditional rotary doser chamber rather than on-demand electronic dosing. Pre-ground coffee accumulates in the doser chamber during idle periods, and one pull of the doser lever dispenses a single dose into the portafilter. This is traditional café workflow; fill the doser chamber at the start of service by running the grinder until the doser is full.

Commercial Capacity

The 5-pound hopper and robust commercial 65mm burrset make the Zenith Doser suitable for continuous café service. The HS (High Speed) designation indicates optimized motor and burr geometry for rapid dose output. The doser's rotary design allows baristas to pre-grind doses during slow periods for rapid service during rushes.

Stepless Grind Adjustment

The Zenith uses Eureka's stepless micrometric bottom-burr adjust for near-infinite settings. When changing grind settings, purge several doses through the doser before using grounds for shots—the doser chamber holds pre-ground coffee that may not reflect the new grind setting.

Tutorials & Training

Doser Operation

Pull the doser lever firmly toward you to dispense one dose of pre-ground coffee into your portafilter. The rotary aluminum doser dispenses a consistent volume per pull; adjust the doser's internal volume setscrew to match your target dose weight. Multiple lever pulls increase the dose.

Pre-Grinding for Service

At the start of service, run the Zenith Doser for several seconds to fill the doser chamber with fresh grounds. This ensures the first shots of service are pulled from freshly ground coffee rather than doser residue from the previous session.

Doser Volume Adjustment

The doser volume is adjustable via a setscrew inside the doser body. Increase the setscrew exposure for a larger dose per pull, decrease for smaller. Verify with a scale until the single pull dose matches your target (typically 7–9g for a single).

End-of-Shift Doser Purge

At end of service, run the grinder briefly then dispense all remaining grounds from the doser before cleaning. Do not leave pre-ground coffee in the doser overnight—it goes stale quickly.

Cleaning & Maintenance

End-of-Day Cleaning

Dispense all remaining grounds from the doser chamber. Remove the doser body and brush clean the chamber walls and fins. Brush the burr area and chute. Wipe the exterior.

Burr Service

The Zenith's easily-serviced burrset is designed for quick commercial maintenance. Run cleaning tablets monthly at commercial use rates. The bottom-burr adjust preserves settings through burr cleaning. Additional titanium or RedSpeed burr upgrades are available.

Troubleshooting

Inconsistent Dose Per Lever Pull

Verify the doser volume setscrew is properly adjusted and not loose. The doser fins may need cleaning—accumulated grounds between fins can cause inconsistent dispensing. Remove the doser body for thorough cleaning.

Stale-Tasting Coffee

The doser chamber holds pre-ground coffee that begins losing freshness within minutes. For the freshest shots, grind-to-order by running the grinder briefly per dose rather than pre-grinding. Purge the doser at the end of each service period.
